Mardi Gras! Happy Fat Tuesday, everyone! Wanna tell me about your Mardi Gras experiences and plans for today?

Feb 20, 2007 by Texasippi Girl | Posted in Other - Holidays

I live near New Orleans, so I'm always interested in hearing how others are celebrating Fat Tuesday.

What are you doing to celebrate Mardi Gras? Are you cooking jambalaya, drinking hurricanes, and having king cake for dessert? Are you decorating your house, or wearing beads today?

Have you ever attended Mardi Gras in New Orleans? Tell me about it!

I wanted to attend Mardi Gras in New Orleans today.. I live right out of Slidell. However, none of my friends wanted to make the trip and fight the crowds. So i went fishing earlier and now am watching it on WWL-TV..oh what great costumes they have on! Wish i was there though. No jambalaya, no gumbo..alas...but perhaps a grilled steak will be in order. Will miss Mardi Gras as I am moving to Canada. Laissez Les Bon Temp Roulez Yeah.

Cooking: Mardi Gras King Cake

We're cooking a Mardi Gras King cake with The Bakery Boutique.

Gumbeaux

TIGERS! "Delivered all the same, but it feels special.

Now, do not let our vocabulary deter you from trying a bowl of this Amazingness. Gumbo (yes, I'll be normal for the rest of this blog entry) is not too crazy. It's basically a chicken stew Smokey / meat or seafood on rice. If you want to be adventurous, you can add frog legs or alligator, but friends, I'll keep this simple.

The basis of most Cajun dishes is a good, dark roux.I must admit, this is my first time, I was very intimidated to burn the roux. Burnt red is not good in gumbo. So, after seeing my head Favorite Food Network, Alton Brown, trying to control the okra, I decided to use parts of his recipe for me.

His method? Oven baked Roux .... Perfection, no? It worked really well for us. Oh yeah and my hubs has a BIG hand in this. There are many things at once, and as I am new to cooking, I do not think I could do it alone.

However, in the recipe, it is only 5 qt. okra.

I want to say that in Louisiana, making just 5 QT. pot of gumbo is not only shameful, it's downright rude ... hehe. When you make gumbo, you invite people over and 5 qt. just will not Cajun happy appetite at all. So, we doubled the recipe and made heavy modifications to it.

I present to you - chicken, sausage, sausage and crab gumbo.

Chicken, andouille sausage, and Crab Gumbo

Ingredients:

8 oz vegetable oil 8 oz all purpose flour 2-3 lbs....
