Anyone have a recipe for authentic carnival-style tasting corn dogs?

Corndog love, but I never found a recipe for corn dog that I loved. I guess I'm just looking for them to taste like the ones they sell at carnivals. Does anyone know a really good recipe?
State Fair CORN DOGS
1 tsp flour
3 / 4 c. yellow cornmeal
2 v. soup. sugar
2 v. soup. baking powder
1 tsp soup. dry mustard
1 tsp Tea. salt
1 tsp milk
1 egg
2 v. soup. shortening
Mix dry ingredients. Stir fat. Add milk, eggs slightly beaten. Stir quickly until almost smooth. Pour batter into a tall glass dipping hotdogs. Fry in hot deep fat until golden brown.

CORN DOGS
1 / 2 c. yellow cornmeal
1 tsp all-purpose flour
1 tsp soup. baking powder
1 tsp Tea. salt
1 tsp soup. sugar
1 tsp Evaporated milk
1 egg beaten
1 / 4 tsp. paprika
1 / 2 tsp. dry mustard
Pinch of pepper
10 to 16 hot dogs
Vegetable oil for frying
In a bowl, combine cornmeal, flour, baking powder, salt, sugar, milk, egg, paprika, mustard and pepper. Pour the mixture into a tall glass. Skewer hot dogs with wooden skewers, soak in this mixture. Fry at 375 degrees until golden (about 2 minutes). Drain on paper towels.Yield: 10 to 16 corn dogs.

How can I make kettle corn at home?

I love the kettle corn at the carnival but I would love to make some at home on the stove. I've tried to make it but always burn the kernels. Any ideas?
You don't have to stir it.. put the lid on firmly, and with oven mitts on, hold the lid and give it a quick shake.
Kettle Corn
Ingredients:
peanut oil
1/4 cup popcorn
1/4 cup sugar
salt
pepper
Directions:
Use a decent size pot (with a lid) and turn on the heat to medium high. Pour in enough oil to lightly coat the bottom. Don't use too much oil. Too much oil will sog the popped popcorn and you'll probably get sick to your stomach when you eat it. Dump in enough popcorn to make a single layer in the pot. Add a little bit of salt and papper. When you see the corn start to get excited but before it starts to pop, quickly pour in the sugar as evenly as you can across the top. Cover and shake back and forth to pop (like Jiffy Pop). You can't pop every single kernel because you would scorch the popcorn. Also pouring in the sugar too soon tends to make the popcorn scorch more easily. Be sure to get the popped popcorn out of the pot as quickly as possible to prevent scorching from the residual heat in the pot. And watch out for the unpopped kernels; they're wicked hot.

Well, I know the key to big pot kettle corn is the constant stirring, but I'm not sure you can do that on the stovetop without being burned. Maybe in a deep pot, a long wooden spoon, a Tbsp. sugar added to the kernels, and a burn kit? Otherwise just buy the microwave stuff.

A month late...
I am * hurray * a stay-at-home mom. I retired several years ago from a long (4 years) illustrious career in nursing * Boo, *. hiss More than anything, I love Leo (mi papacito esposo de Colombia) and Elena and Ana and Isabel (mi hijas). My other passion is also dark and Rico and South America - it would be chocolate. Basically, I want to eat chocolate, chocolate ice cream eating, eat frozen hot chocolates from Dairy Queen, eat Peppermint Yorks, Junior Mints, and of course dark chocolate truffles. Well, now that I wiped the drool off my chin from thinking about all this, I'll get the rest of my blog.Oh, and try to learn Spanish but who spend too much time here instead of blogging.
